Baking

Native to Vietnam and still grown there exclusively, this cassia is thought by many to be the best. Cassia is what we here in the States commonly known as cinnamon. But in reality, “true” cinnamon is the bark of an actual cinnamon tree, whereas what we know as cinnamon is the bark of a cassia tree. We grind Saigon in small batches weekly to ensure freshness.

Cassia trees must grow for 20 to 30 years before they can be harvested.

The unmatched flavor of Vietnamese Saigon cassia is stronger and sweeter than your best store bought cinnamon. The bark is thicker and darker than Indonesian cassia, producing a rich dark brown cinnamon. This cinnamon is great for baking, savories and flavoring for drinks.

Chicken Glaze: Mix with honey and ground ginger to make a sweet and spiced glaze for chicken.

Bolognese sauce: Add a touch of cinnamon to a classic bolognese sauce for subtle warmth.

Exclusively grown in Vietnam, this strong but sweet cassia is thought by many to be the best and pairs well with nutmeg.

Works well in both sweet and savory applications. Try in desserts and baked goods. Flavor beverages. Add to curry, soups, and stir fries.

For 4-5 T of mix: Blend 2 T cinnamon and sugar with 3/4 t ground allspice, and 1/4 t clove and nutmeg
