Apple and Brie Galette

Ingredients

For pie dough: 1 cup unsalted butter, sliced thin and frozen 2 ⅔ cups all-purpose flour 4 tsp. Bohemian Forest
Mayan Sea Salt 1 tsp. Mayan Sea Salt
1 egg 1 egg yolk ¼ cup plus 3 Tbsp. ice water For apple butter: 3 apples, peeled and diced ½ cup apple juice 2 ½ Tbsp. brown sugar 1 ½ Tbsp. lemon juice
Ground Rosemary 1 ½ tsp. Ground Rosemary
Supreme Saigon Cinnamon ½ tsp. Supreme Saigon Cinnamon
Mayan Sea Salt ¼ tsp. Mayan Sea Salt
To assemble: 6 apples, cored and sliced thin 6 oz. Brie cheese, sliced 1 tsp. Bohemian Forest 6 sprigs fresh rosemary 3 strips diced, cooked bacon, to garnish (optional)
