Creamy Chicken Caesar Wrap

Ingredients
1 egg 1/2 cup panko breadcrumbs
Caesar Seasoning
5 Tbsp. Caesar Seasoning, divided
¼ cup shredded Parmesan cheese, plus more to sprinkle
1 lb. chicken tenderloins
Kosher Salt
Kosher Salt, to sprinkle
½ cup mayonnaise
1 Tbsp. milk or water
1 tsp. honey
1 tsp. lemon juice
4 tortillas
1 cup shredded lettuce
⅓ cup halved cherry tomatoes
⅓ cup diced cucumber
Directions
Step 1
In a small bowl, beat egg and set aside. In another small bowl, combine panko, 3 Tbsp. Caesar Seasoning, and Parmesan.
Step 2
One at a time, dip chicken in egg, then transfer to bowl with panko mixture and turn to coat evenly.
Step 3
To Air Fry preheat the air fryer to 380°F or select the Air Fry setting. Spray basket with non-stick cooking spray and set the chicken in it. Spray the top of the chicken with more cooking spray. Cook in the air fryer for 10 minutes, flip each chicken tender, and spray with cooking oil again. Cook for another 10 to 12 minutes until the internal temperature reaches 165°F. Depending on the size of your air fryer, you may have to cook the chicken in two batches.
Step 4
To Bake, preheat oven to 350 degrees. Line a baking sheet with aluminum foil. Arrange chicken on baking sheet. Bake for 16 to 18 min. until lightly browned and the internal temperature of the thickest piece reaches 165°F.
Step 5
While chicken cooks, combine mayonnaise, milk, honey, lemon juice, and 2 Tbsp. Caesar Seasoning until smooth.
Step 6
Once the chicken is cooked, remove from air fryer or oven, sprinkle with Kosher Salt to taste, then dice into bite-size pieces.
Step 7
To assemble, spread a small spoonful of sauce in the center of a tortilla. Add a small handful of lettuce, cherry tomatoes, cucumber, and chicken. Drizzle with more sauce and sprinkle with Parmesan to taste. Roll into a tight wrap, folding the sides as you roll to keep the filling contained. Slice in half and serve immediately, or wrap in aluminum foil and chill to enjoy later.
