Salted Caramel Apple Pie with Brown Butter Oat Crumb

A deep-dish apple pie where macerated apples build their own caramel filling — no collapsing, no pastry anxiety. Topped with a brown butter oat crumb and finished with a warm caramel drizzle and flaky salt.

Step 1
Macerate the apples. Toss the sliced apples with the brown sugar, Salted Caramel Spice, Baking Spice, and lemon juice. Stand at room temperature 2 hours (or refrigerated up to 8).
Step 2
Make caramel filling. Drain the apples over a bowl which will yield roughly ½ to ¾ cup of spiced juice. In a small saucepan add 2 Tbsp butter and simmer for 5 to 8 minutes, until thick, glossy, and syrupy. Remove from heat and stir in Pure Madagascar Vanilla Extract.
Step 3
Build the pie. In a large bowl, toss the drained apples with flour. Then add the warm caramel and combine until coated. Place pie dough in pie pan then pile apples in a mound for the deep dish height.
Step 4
Make the brown-butter crumb. In a large pan, over medium-low heat add butter and cook until the milk solids turn toasty amber and it smells nutty, about 4 to 6 minutes. Cool for 5 minutes off heat. In a large bowl combine flour, oats, brown sugar, Baking Spice, and a pinch of salt. Then stir cooled brown butter to create coarse, clumpy crumbs. Spread crumbs over the whole pie so it's fully covered.
Step 5
Pre-heat oven to 375°F and place pie dish on a parchment-lined sheet pan. Bake 55 to 65 minutes, until the crumb is deep golden and the filling bubbles thickly at the edges. Tent with foil at the halfway mark if browning fast. Cool at least 3 hours, the filling sets as it cools.
Step 6
Drizzle and serve. In a small pan, warm butter, cream, and Salted Caramel Spice, whisking until pourable, 1 to 2 minutes. Since Salted Caramel Spice already carries salt, taste the drizzle before adding the French Fleur de Sel. Drizzle over the pie or each slice, scatter flaky salt (if desired), serve with vanilla ice cream.
