*The sweetener in this recipe is to balance out the heat from the mustard powder, and does not sweeten the mustard enough to be a honey mustard. Feel free to add more to taste if you like your mustard a little sweeter!

1 to 2 Tbsp. honey or agave*

Directions

Step 1: Reduce mustard

In a non-reactive pot (such as stainless steel), whisk Regular Yellow Mustard Powder with water and vinegar. Slowly and gently bring mixture to a simmer over medium-low heat. Simmer until reduced by half and mixture eaches a mustard consistency.

Step 2: Season and finish

Transfer reduced mustard to a non-metal container and add sweetener, Mayan Sea Salt, and any other seasonings of choice. Mustard can be used right away but it will be pretty potent. To mellow it, let it sit in a cool dark place for 24 to 48 hours then taste for flavor and heat. Refrigerate once desired heat level is reached to maintain desired heat level.
