In a non-metal container, whisk Regular Yellow Mustard Powder with water and vinegar. Cover and let stand at least 10 min. before adding seasoning options, if using. Mustard can be used right away but it will be pretty potent. To mellow it, let it sit in a cool dark place for 24 to 48 hours then taste for flavor and heat. Refrigerate once desired heat level is reached to maintain desired heat level.
