Maple Whipped Sweet Potatoes

Ingredients
6 large sweet potatoes canola oil, to coat Zest and juice of 1 orange
Pure Maple Sugar
1/4 cup Pure Maple Sugar
1/4 cup (1/2 stick) unsalted butter
2 Tbsp. Georgia Peach Spice
Whiskey Barrel Smoked Black Pepper
1 tsp. Whiskey Barrel Smoked Black Pepper

Directions
Preheat oven to 400 degrees. Clean sweet potatoes and poke a few holes in each with a fork or paring knife. Rub with oil to lightly coat. Place on a large, foil-lined baking sheet and bake for 45 min. to 1 hour or until easily pierced to the center with a fork, 45 min. Remove from oven and let cool until comfortable to handle. Peel skins add flesh to the bowl of a stand mixer fitted with the whisk attachment. Add remaining ingredients and whisk at medium speed, stopping to scrape down sides of the bowl as needed, until smooth. Transfer to a dish to serve or cover and place in a warm oven until ready to serve. Finish with Whiskey Barrel Smoked Black Pepper on top.
