A lighter take on classic burgers, this black bean burger is perfect for summer grilling. Seasoned with Mexican Street Corn Seasoning and topped with a simple corn salsa and cotija, you'll get all the notes of elote in a hearty main dish. Ingredients

For burgers: 1 Tbsp. canola oil 1 bell pepper, finely diced, divided 1 large yellow onion, finely diced, divided

2 (14 ounce) cans black beans, drained, rinsed, and patted dry 1/2 cup bread crumbs 1 Tbsp. choice of seasoning:

2 large eggs For corn salsa: 1 bag frozen grilled corn 1 jalapeño, finely diced Juice of 2 small limes To assemble: 4 hamburger buns or 8 slider buns Cotjia cheese
