Spiced Carrot Mug Cake

1 package Spiced Carrot Mug Cake Mix

1/4 cup all-purpose flour

1/4 tsp. baking powder

1 egg*

2 Tbsp. unsalted butter, melted*

2 Tbsp. water

DIRECTIONS:

In a 14 oz. microwave-safe mug, mix egg, Spiced Carrot Mug Cake mix, flour, butter, water, and baking powder until combined, ensuring no dry ingredients remain at bottom of mug. Microwave in 30-second intervals just until center of cake is set, about 90 seconds total. Let cool slightly before enjoying.

SERVING SUGGESTIONS:

Top with cream cheese frosting and chopped pecans.

NOTES:

For Cream Cheese Icing: Combine 2 Tbsp. each cream cheese and powdered sugar. Microwave for 15 seconds, mix until smooth, and drizzle over cake.

To bake in an oven, preheat oven to 350 degrees. Bake cake in a mug for 24-26 minutes or in a mini cupcake tray for 10 minutes (makes 12 mini cupcakes).

Why is my carrot cake soggy?

If you aren't checking to see if the center of your carrot mug cake is set after microwaving for 30-second intervals, it might turn out soggier or more gooey than expected. Try sticking a fork or toothpick in the middle if you can't tell if the center of it is set or not before trying to eat it.
