2 Tbsp. baking powder


½ cup maple syrup

½ cup unsalted butter

Directions

Baking Method

Step 1: Bake wings

Preheat oven to 250 degrees. In a large bowl, toss wings with baking powder and 2 Tbsp. Salted Caramel Spice. Line a baking sheet with foil and place a greased baking rack inside. Arrange wings on baking rack. Cook for 30 min. Without removing wings from oven, increase to 425 degrees. Cook an additional 40 min. until chicken is light brown and crispy.

Step 2: Make glaze

In a small pot, combine maple syrup, butter, fish sauce, lime juice, Crushed Red Pepper Flakes, Ground Ginger, Minced Garlic, Fine Black Malabar Pepper, and remaining 2 Tbsp. Salted Caramel Spice. Bring glaze to a simmer over medium heat, then reduce heat and cook for 3 to 4 min., stirring occasionally until glaze thickens slightly.

Step 3: Glaze wings

In a clean large bowl, toss wings with most of the glaze. Return wings to baking rack and oven for 10 min. Brush or drizzle wings with remaining glaze, sprinkle with cilantro, and serve.

Grilling Method

Step 1: Marinate wings

Pat the chicken wings dry with paper towels. In a large bowl, toss the wings with baking powder and 2 Tbsp. Salted Caramel Spice.

Step 2: Grill wings

Preheat your grill to medium-high heat (around 400 degrees). If your grill has different heat zones, aim for a direct heat zone for searing and an indirect heat zone for even cooking. Once the grill is hot, sear the wings directly over the heat for 2 to 3 min. per side or until they have nice grill marks. Move the wings to the indirect heat zone and close the lid. Grill for an additional 20 to 25 min. or until internal temperature of the thickest part of the wing reaches 165 degrees.

Step 3: Make glaze

While wings are grilling, prepare the glaze in a small pot on the stovetop. Combine maple syrup, butter, fish sauce, lime juice, Crushed Red Pepper Flakes, Ground Ginger, Minced Garlic, Fine Black Malabar Pepper, and remaining 2 Tbsp. Salted Caramel Spice. Bring the glaze to a simmer over medium heat, then reduce heat and cook for 3 to 4 min., stirring occasionally, until glaze thickens slightly.

Step 4: Glaze wings

In a large bowl, toss the cooked wings with most of the glaze. Return wings briefly to the direct heat zone of the grill for a final caramelization of the glaze, watching closely to avoid burning. Garnish with chopped cilantro and serve immediately.
