Vanilla Bean French Toast Muffins

1/4 cup Vanilla Bean Sugar
4 tsp. spice of choice:
Baking Spice
Baking Spice
Supreme Saigon Cinnamon
Ground Supreme Saigon Cinnamon
Pumpkin Pie Spice
Pumpkin Pie Spice
4 eggs
1 1/2 cups half and half
1/4 cup maple syrup
2 tsp. vanilla extract of choice:
Pure Madagascar Vanilla Extract
Pure Madagascar Vanilla Extract
Pure Mexican Vanilla Extract
Pure Mexican Vanilla Extract
4 to 5 cups diced day-old French bread (about 1/2 loaf)
4 Tbsp. melted salted butter, divided

Soak bread

In a small bowl, combine Vanilla Bean Sugar and spice of choice. Set aside. In a large bowl, whisk eggs, half and half, maple syrup, vanilla extract of choice, and 2 Tbsp. reserved sugar mixture until smooth. Add bread and stir to fully coat. Cover and chill overnight or at least 4 hours. Step 2: Scoop & bake

Preheat oven to 375 degrees. Thoroughly brush cups of a muffin tin with about 2 Tbsp. butter. Sprinkle cups with about 2 Tbsp. reserved sugar mixture, turning pan to fully coat sides. Divide bread mixture between cups, filling each to the top. Brush tops with remaining 2 Tbsp. butter and sprinkle with remaining sugar mixture. Bake for 25 min. until puffed and golden brown. Cool for 5 min. in pan before serving.
