Smoked Sugar and Apple Muffins

A delicious sweet start to your day. These muffins have a hint of smokiness, sweet apple pieces, and a coarse sugar topping.

Ingredients
1 cup Bourbon Barrel Smoked Sugar, plus more to sprinkle 1/2 cup (1 stick) butter, melted 1/2 cup sour cream or yogurt, room temperature 2 eggs, room temperature 2 cups finely diced Braeburn apples 1 3/4 cups all-purpose flour 1 1/2 tsp. baking powder

1 tsp. Baking Spice
Mayan Sea Salt
1/2 tsp. Mayan Sea Salt
1/4 tsp. baking soda

Directions
Preheat oven to 375 degrees and prepare a standard muffin pan, either with muffin liners or grease with cooking spray. In a large bowl, combine Whiskey Barrel Smoked Sugar, butter, eggs, and sour cream. Stir to combine. Add apples, flour, baking powder, Baking Spice, Mayan Sea Salt, and baking soda. Fold just until no dry powders remain. Fill muffin cups three-quarters of the way full and sprinkle each with about 1/2 tsp. smoked sugar. Bake for 20 to 25 min., or until the tops are golden brown and a toothpick inserted into one of the muffins comes out clean.
