Zanzibar Sweet Potato Bisque

Creamy sweet potatoes meet warm East African spices in a rich, comforting bisque that brings Zanzibar-inspired flavor to classic autumn soup.

Step 1
Place the sweet potatoes and vegetable stock in a large pot. Bring to a boil over high heat and cook until the sweet potatoes are fork-tender, about 15 to 20 minutes. Remove from heat. Stir in the Zanzibar Curry Powder and apples. Let stand for 3 to 5 minutes to allow the apples to soften and the curry to bloom in the hot broth.
Step 2
Transfer the sweet potatoes, apples, brown sugar, salt, pepper, heavy cream, and vegetable stock to a blender or food processor. Blend until silky smooth.
Step 3
Return the bisque to the pot and warm gently over low heat if needed. Do not boil.
Step 4
Serve topped with Sage and Savory Croutons, fresh mint, parsley, or cilantro, and a drizzle of honey and/or Garlic Chili Crisp Oil.
Recipe Notes
For mild bisque, use 2 Tbsp. Of Zanzibar Curry Powder. For a spicier bisque use up to 4 Tbsp.
Top with Sage and Savory Croutons and Garlic Chili Crisp Oil.
