For soup: 2 Tbsp. olive oil or unsalted butter 1 yellow onion, diced 3 carrots, peeled and sliced 3 celery stalks, sliced 3 cloves garlic, minced 2 Tbsp. Poultry Seasoning
Kosher Salt
1 tsp. Kosher Salt (adjust to taste)
Fine Black Malabar Pepper
½ tsp. Fine Black Malabar Pepper
Ground Turmeric
½ tsp. Ground Turmeric (optional, for color and depth)
8 cups chicken broth (homemade or store-bought)
2 cups cooked shredded chicken (rotisserie works great)
2 cups egg noodles (or your preferred noodle)
1 Tbsp. lemon juice (brightens the flavor)
¼ cup freshly chopped parsley
For serving:
Extra fresh parsley for garnish
Crusty bread or your favorite crackers

Directions
Step 1
Sauté the Aromatics: Heat olive oil or butter in a large pot over medium heat. Add onions, carrots, and celery, sautéing for 5-6 minutes until softened. Stir in garlic, Poultry Seasoning, salt, black pepper, and turmeric; cook for 30 seconds until fragrant.
Step 2
Build the Soup Base: Pour in chicken broth, scraping up any bits from the bottom of the pot. Bring to a gentle simmer and let cook for 15 minutes to develop flavors.
Step 3
Add Chicken and Noodles: Stir in shredded chicken and let simmer for 5 minutes. Add egg noodles and cook until tender (6-8 minutes, or according to package instructions).
Step 4
Finish and Serve:Stir in lemon juice and fresh parsley for brightness. Taste and adjust seasoning as needed. Ladle into bowls and garnish with extra parsley. Serve hot with crusty bread or crackers on the side.
