Classic Vegetable Soup with Summit County

Ingredients

For soup: 2 Tbsp. olive oil 1 yellow onion, diced 3 carrots, peeled and sliced 2 celery stalks, sliced 3 cloves garlic, minced 2 Tbsp. Summit County
Kosher Salt ½ tsp. Kosher Salt (adjust to taste)
Fine Black Malabar Pepper ½ tsp. Fine Black Malabar Pepper
1 (14.5 oz) can fire-roasted tomatoes 6 cups vegetable broth (or water with a bouillon cube) 1 zucchini, diced 1 red bell pepper, chopped 1 green bell pepper, chopped 1 cup green beans, trimmed and chopped 1 (15 oz) can cannellini beans, drained and rinsed 1 tsp. lemon juice (for brightness)
California Basil 1 tsp. California Basil
For serving: Crusty bread or your favorite crackers Freshly grated Parmesan (optional)
