Classic Vegetable Soup with Summit County

This hearty and flavorful vegetable soup is infused with our Summit County seasoning, a well-balanced blend of black pepper, garlic, tomato powder, and Mediterranean herbs like oregano, basil, and thyme. The seasoning enhances the vegetables' natural sweetness while adding depth with aromatic spices.

Ingredients
For soup: 2 Tbsp. olive oil 1 yellow onion, diced 3 carrots, peeled and sliced 2 celery stalks, sliced 3 cloves garlic, minced 2 Tbsp. Summit County
Kosher Salt
½ tsp. Kosher Salt (adjust to taste)
Fine Black Malabar Pepper
½ tsp. Fine Black Malabar Pepper
1 (14.5 oz) can fire-roasted tomatoes
6 cups vegetable broth (or water with a bouillon cube)
1 zucchini, diced
1 red bell pepper, chopped
1 green bell pepper, chopped
1 cup green beans, trimmed and chopped
1 (15 oz) can cannellini beans, drained and rinsed
1 tsp. lemon juice (for brightness)
California Basil

For serving:
Crusty bread or your favorite crackers
Freshly grated Parmesan (optional)

Directions
Step 1
Sauté the Aromatics: Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery and sauté for 5-6 minutes until softened. Stir in garlic, Summit County Seasoning, salt, and black pepper; cook for 30 seconds until fragrant.
Step 2
Build the Soup Base: Add fire-roasted tomatoes and stir to coat the vegetables. Pour in vegetable broth, scraping up any bits from the bottom of the pot. Bring to a gentle simmer and cook for 10 minutes.
Step 3
Add Vegetables and Simmer:Stir in zucchini, red and green bell peppers, green beans, and beans. Simmer uncovered for 15-20 minutes until all vegetables are tender.
Step 4
Finish and Serve:Stir in lemon juice and California basil for brightness. Taste and adjust seasoning as needed. Ladle into bowls and serve with crusty bread or crackers. Optional: Sprinkle with Parmesan cheese for extra richness.
