Orange & Maple Whipped Sweet Potatoes

Sweet potatoes made creamy with maple syrup and butter, without the sugary mix-ins and toppings of traditional mashed versions. Customize with different spice blends for a unique twist on holiday or everyday meals.

Ingredients
6 large sweet potatoes 3 Tbsp. olive oil ¼ cup pure maple syrup ½ orange, juice and zest 4 Tbsp. Butter 4 tsp. seasoning of choice: Spiced Brown Sugar Honey Ham Rub

Directions
Step 1
Preheat oven to 400° and line a baking sheet with foil.
Step 2
Rinse and scrub sweet potatoes, poke a few holes in each with a fork and rub lightly with oil. Place on foil lined baking sheet.
Step 3
Bake for about 45 minutes, or until easily pierced with a knife. Remove from oven and let cool until comfortable enough to handle.
Step 4
Peel off skins and slice directly into the bowl of an electric mixer, using the whisk attachment. Add remaining ingredients and whisk at medium speed, stopping to scrape down sides of bowl. Whisk until smooth. If using a salt-free blend, salt and pepper to taste.
Step 5
Transfer to a large baking dish and serve. Or, cover with foil and place in a warm oven until ready to serve.
