Palisade Peach Crisp

Ingredients

Filling Ingredients: 3 lbs. peaches, pitted and sliced 2/3 cup sugar 2 Tbsp. cornstarch
Palisade Peach Spice 1 Tbsp. Palisade Peach Spice
Kosher Salt ¼ tsp. Kosher Salt
Crisp Topping Ingredients: ¾ cup brown sugar, packed ¾ cup all-purpose flour 2/3 cup old-fashioned rolled oats 2/3 cup pecans, chopped
Ground Ceylon Cinnamon 1 tsp. Ground Ceylon Cinnamon
Kosher Salt ¼ tsp. Kosher Salt
½ cup (1 stick) cold unsalted butter, cut into small cubes

Recipe Notes

Use local, seasonal peaches (like Palisade) when possible for the best flavor. No need to peel the peaches; the skin adds texture. Works with fresh or frozen peaches.
Few people outside of Colorado know that Palisade peaches carry tremendous regional pride (and flavor), the kind that locals plan their entire August around. Palisade sits just a few hours west of Denver, and every year it earns that reputation with the world-famous Palisade Peach Festival.
