Palisade Peach Crisp

A jammy, sweet peach filling under a golden, spiced, and buttery topping. Serve warm with a big scoop of vanilla ice cream.

Step 1
Preheat the oven to 350°F. Grease a cast-iron skillet or 9-inch baking dish with baking spray or butter and set aside.
Step 2
In a large bowl, add peaches and sugar and toss until peaches are coated. Rest at room temp for 10 minutes.
Step 3
Meanwhile, in a medium bowl, add brown sugar, flour, oats, pecans, Ground Ceylon Cinnamon, and salt and stir to combine. Add very cold butter cubes to the flour mixture and toss in until coated. Using clean hands or a pastry cutter, work the mixture until it's clumpy and the butter pieces are pea-sized or smaller. Place the bowl in the refrigerator or freezer until you are ready to assemble.
Step 4
Drain the peaches, reserving ¼ cup of juice. Place peaches back in the large bowl. Whisk cornstarch, Palisade Peach Spice, and Kosher salt with reserved juice until smooth. Add sauce to peaches and stir to combine, then pour the peach mixture into the prepared baking dish.
Step 5
Spread crisp topping evenly over peaches. Bake for 40-50 minutes until golden brown and visibly bubbly in the center. Rest for 10-15 minutes before serving.
Step 6
Serve with vanilla ice cream and lightly sprinkle Palisade Peach Spice over ice cream.
Recipe Notes
Use local, seasonal peaches (like Palisade) when possible for the best flavor. No need to peel the peaches; the skin adds texture. Works with fresh or frozen peaches.
