Peruvian Street Corn Chicken Tostadas

Ingredients

For avocado crema: 2 avocados ½ cup Mexican crema or sour cream 1 lime, juiced (about 2 Tbsp.) 2 Tbsp. Fresh cilantro, chopped 1/8 tsp. garlic powder of choice:

Roasted Granulated Garlic Roasted Granulated Garlic
Kosher Salt Kosher Salt, to taste
For chicken and corn: 2 medium boneless skinless chicken breasts, pounded to 0.5 to 0.75-inch thickness 1 Tbsp. olive oil Kosher Salt, to taste
Peruvian Chile Lime Seasoning 2 Tbsp. Peruvian Chile Lime Seasoning, divided
1 Tbsp. butter, diced 12 oz. frozen fire roasted corn
Kosher Salt Kosher salt, to taste
Fine Black Malabar Pepper Fine Black Malabar Pepper, to taste
For serving: 8 tostada shells ½ cup cotija cheese, crumbled 1/4 cup fresh cilantro, chopped Lime wedges, for serving

Recipe Notes

To prevent the avocado from browning, press a piece of plastic wrap against the top of the avocado crema to remove all air before sealing.
Substitute plain Mexican crema for a more traditional street-corn inspired flavor.
