Ingredients

1 tart apple (like a Granny Smith), peeled, cored, and sliced very thin

1 sweet apple (like a Gala), peeled, cored, and sliced very thin

3 medium carrots, peeled and shaved into strips with a vegetable peeler

1 1/2 cups apple cider vinegar

3/4 cup water

1/2 cup granulated sugar

Directions

Place apples and carrots in a heatproof bowl. Mix vinegar, water, sugar, and Pickling Spice in a medium saucepan. (Tip: If you don’t want Pickling Spice pieces floating in your quick pickles later, place spices in a muslin bag or tie them into a piece of cheesecloth.) Bring mixture to a boil, stirring to dissolve sugar. Pour hot mixture (including spices) over apples and carrots. Let sit for 30 min. at room temperature, or until cooled. Transfer to a quart-size jar, cover, and refrigerate until chilled. Best served after 24 hours in the fridge.
