5 Chili Recipes You Need to Make ASAP
I eat chili all year long, no matter the weather. It’s such a simple, easily customizable, satisfying meal. But when October hits, chili season kicks in hard for me. For as long as I can remember, it has been the traditional pre-trick-or-treating meal of choice at my house. I throw everything in a pot as soon as I’m home from work, let it simmer away while I get my daughter’s ghoulish makeup/last minute costume updates/wild hairdo ready to go and we all enjoy a hot, filling bowl before heading out to collect candy. This isn’t a scientific fact, but I also think it helps mitigate the inevitable sugar rush that comes later in the evening. (Pictured above: South End Brewski Chili)
1. Classic Red Chili:
South End Brewski Chili
Starring Chili Powder and Cumin, this recipe is my go-to for that classic red chili flavor. It includes a bottle of beer and experimenting with the flavor of different brews adds to the cooking fun. I leave out the beans (don’t get mad, it’s a just a personal preference!) and serve it up chili mac-style over elbow macaroni. Topped with sour cream and diced white onion, the leftovers never last long in my house. This one also happens to be low-sodium, which is a bonus for anyone watching their salt intake.
2. Chili with a BBQ Twist:
Southern Gold Pork Chili
When it comes to Savory’s line of barbecue sauces, the mustard-spiked Southern Gold is my personal favorite. When the Test Kitchen crafted a chili recipe that combines this sweet and tangy sauce in a pork-studded chili, it was love at first bite. A touch of Hot Red New Mexican Chile Powder amps up the heat in this recipe. Bonus: you can top it with a fried egg and eat it for breakfast. And breakfast chili is something everyone deserves.
3. Fall-tastic Chili:
Pumpkin Pie Spice Chili
There’s nothing wrong with a Pumpkin Spice Latte (although I prefer this homemade version), but combining one of fall’s signature spice blends with something as comforting as chili? That can’t be beat. Made with ground turkey and quinoa, this recipe is especially filling which means leftovers will go far. Plus it’s perfect for fall dinner parties because it’s served on top of a piece of roasted pumpkin. Adorable presentation? Check. Amazing, Pumpkin Pie Spiced flavor? Double check. And don’t skip the yogurt garnish - it gives this meal an elegant, creamy finish.
4. A Fusion of Mexican Flavors:
Mexican Mole Beef Chili
Part beefy chili con carne, part luscious mole, this recipe and rich and oh-so-satisfying. The base of the flavor starts with bacon, so you know it’s got to be delicious, then big chunks of chuck roast join the party. But the key to that complex mole flavor is our Mexican Mole seasoning which creates a darkly colored finished chili with notes of cocoa and sweet chiles.
5. The Quick-Cooking Option:
Chicken Fajita & White Bean Chili
Most of the other chili recipes on this list are at their best after a nice long simmer. But this one’s different. Using cubed chicken breast and minimal prep (no veggie dicing required!), this comes together in less than 20 minutes.
