Slow Cooker Bourbon BBQ Beans
Recipe by Abbey Cochran, Savory Spice—South End/Charlotte, NC
The slow cooker does all the work for these flavorful baked beans. Season them to fit any regional barbecue spread by choosing a different style of BBQ rub each time you make them.
Serves
8 to 10 servings
Ingredients
Directions
Step 1
Drain and rinse beans and set aside.
Step 2
Slice bacon into strips and cook in a skillet over medium-high heat until crispy. Transfer bacon to a paper towel-lined plate. Drain all but 3 Tbsp. bacon grease from the skillet.
Step 3
Cook onion and garlic in bacon grease over medium heat until soft, 5 to 7 min.
Step 4
Meanwhile, add remaining ingredients except beans to the slow cooker. Whisk everything together then add beans, bacon, and onion-garlic mixture. Stir to combine, cover, and cook on low for 8 hours.
Step 5
After 8 hours, mixture will be soupy; turn the heat off but keep slow cooker covered for 30 min. to 2 hours to thicken beans before serving.
