Za'atar Spinach Pasta with Lemon Ricotta

Mediterranean-inspired pasta with bright lemon, earthy za'atar, and fresh spinach served over creamy lemon ricotta for a quick weeknight dinner.

Step 1
Place the ricotta, lemon juice and zest in a medium mixing bowl and whip using a hand mixer. Season with salt and black pepper to taste. Set aside.
Step 2
Bring large pot of water to a boil and add a dash of Kosher salt. Add pasta and cook to al dente according to package instructions, usually about 8-9 minutes). Reserve 2 cups of pasta water, then drain.
Step 3
Heat a large pot to medium heat and add the olive oil. Once the oil shimmers, add garlic and cook about 1 minute until fragrant. Add about ½ cup of the reserved pasta water, then add the spinach in batches, stirring until wilted and seasoning with a pinch of salt as you go. Once all the spinach is wilted, stir in 1 Tbsp. za'atar.
Step 4
Add pasta to pot and toss to combine with spinach. Add Parmesan cheese and remaining Za'atar and combine. If pasta looks dry, add a little more olive oil and/or a splash more of pasta water until it looks just glossy.
Step 5
Divide ricotta between 6 pasta bowls and spread along the bottom of the bowl. Top with pasta, a sprinkle of Parmesan cheese, and fresh basil. Garnish with crushed chiles if desired and serve immediately.
