Directions

Melt butter in a saucepan over medium heat. Add cream and stir to incorporate butter. Add seasoning of choice and stir until cheese is completely melted. Whisk in egg yolk (if using). Reduce heat to low and simmer for 4 to 6 min. then remove from heat and add salt and pepper to taste. Tip: Use additional cream or some of the pasta cooking water to thin sauce out to desired consistency.
