Pollard's Bar-B-Que was my second to last stop in Memphis. Here, I had the chance to sit down and talk a little barbecue with Tarrence Pollard. It's his joint and he runs his own pit every day and has for last 19 years. From what I could extract from him, it sounds like he's been in barbecue most of his life, like it's in his blood - which is actually true as his uncle owns another one of my Memphis stops, A&R Barbecue.
Like many of the barbecue spots in Memphis, Tarrance uses charcoal, but also puts his own twist on it by adding in just a bit of hickory wood. I think he's alright with me giving out that little secret.
This was the first spot that I noticed fried green tomatoes on the menu and because I needed my veggies to combat all this barbecue, I ordered them and more veggies...fried pickles. I also got extra slaw on my barbecued bologna sandwich. The ribs were tender and had a thick, sweet-but-not-too-sweet sauce on them.
Mr. Pollard is another guy that preaches about a belief that good barbecue can only be made with love...and you have to love it to man your own pit for as long as he has! #chasingbbq
