Saffron Maple Granola

This ritzy mix of rich nuts and sweet dried fruit is elevated further with a touch of Saffron Salt.

Ingredients
1 1/2 cups rolled oats 1 cup whole pecans 1/2 cup shelled pistachios 1/2 cup macadamia nuts 1/4 cup coconut oil 1/4 cup maple syrup
Saffron Salt
1 tsp. Saffron Salt*
1/4 cup dried apricots, sliced
1/4 cup dried cranberries
Directions
Preheat oven to 200 degrees. Mix oats and nuts in a large bowl. Melt coconut oil in a saucepan over medium heat. Remove from heat and combine with maple syrup and Saffron Salt. Pour oil mixture over the dry mixture and stir to evenly coat. Spread the granola on a baking sheet. Bake for 30 min, stirring every 15 min. Toss granola mixture with apricots and cranberries. Allow the granola to cool completely before storing in an airtight container.
